The World Gastronomy Summit Declaration on Food at the Heart of Cultural Policies and Community Well-being
We, the undersigned, gathered in Barcelona at the first World Gastronomy Summit, in the presence of cultural leaders, policymakers, chefs, producers, researchers, and representatives of civil society, hereby declare our shared commitment to recognize, preserve, and celebrate food as a fundamental pillar of cultural heritage and identity.
We affirm that food is much more than nourishment. It is a living expression of culture — rooted in memory, territory, tradition, creativity, and community. Culinary practices connect generations, tell the stories of our peoples, reflect our natural environments, and shape our shared sense of belonging.
On the eve of MONDIACULT 2025, we call upon governments, international organizations, regional bodies, and civil society to join us in:
- Recognizing food as cultural heritage and fully integrating it into cultural, agricultural, tourism, and educational policies;
- Supporting local and regional initiatives that promote sustainable food systems, rooted in evolving cultural traditions, celebrating cuisine and its ingredients;
- Empowering youth and communities to preserve and innovate their gastronomic heritage with pride, by investing in producers and protecting the ways of life of regions;
- Encouraging research and storytelling that document and celebrate food traditions from around the world;
- Promoting inclusive dialogue that unites cultures and generations through the shared language of food.
This Declaration is inspired by UNESCO’s leadership in recognizing culinary traditions as part of the world’s intangible cultural heritage. Fifteen years after UNESCO’s recognition of the Mediterranean diet as intangible cultural heritage, we reaffirm the essential role of gastronomy in protecting cultural diversity and fostering intercultural dialogue. From traditional agriculture and artisanal preparation to festive rituals and daily meals, UNESCO’s work on food traditions highlights both the richness and the fragility of our shared food heritage.
This Declaration aims to serve as a landmark in a growing global movement that calls for gastronomy to be placed at the heart of cultural policies and community well-being.
Together, we commit to nourishing both people and the planet — by protecting and celebrating one of humanity’s deepest cultural expressions: the food that defines us.
